We’ve been out foraging in the hedgerows around the Gap of Dunloe this week. With the sunny weather this is definitely a favourite job of the team here!Nettle Quiche with Feta and Parmesan is on the Menu at Heather!!!

 

 

Its a great time of year for picking nettles as they are young and tender and in plentiful supply at the moment. Nettles are a great nutrient rich tasty food thats on our doorstep.

 

They are high in iron, calcium, Vitamin C and a plethora of other nutrients.

 

 

We’ve teamed Nettle, Feta and Parmesan to make a yummy Quiche for our menu. Served hot out of the oven with Garden leaves fresh from Mary Walshes Farm.

 

Here are some tips for nettle picking:

 

-Pick when the plant is young. Older plants can be bitter and fibrous. Make sure that they haven’t flowered as well. You will want to pick before they reach that point.

 

-Pick/cut the top 4-6 inches of the plant (this will be the tender part), and it will regrow and then you can harvest again.

– Wear Gloves, pants and a long sleeve shirt to avoid getting stung

-Avoid picking right by the roadside where fumes from cars may have contaminated the crop.
