Lovely American Group visiting yesterday and had some requests on how to make our delicious scones. Kathleen O Sullivan our very talented and lovely baker was kind enough to share her recipe with me today.





Kathleens Fruit Scones


1lb Plain Flour

Pinch of Salt

2 Oz Caster Sugar

3 Teaspoons Baking Powder

3 Oz Margarine

16 Oz Buttermilk



Gas 6 – 160 degrees


Sieve plain flour, sugar, salt, baking powder.

Rub in Margarine and add Buttermilk to form the dough.

Cut out scones

Brush with Egg Wash

Bake for 15 minutes and enjoy with some yummy Jam, Butter and Cream. Stay tuned for sour Recipe for Homemade Rhubarb and Ginger Jam!!
